Chia Seed Pudding (1 Serving)

Ingredients:

  • ½ scoop protein powder (vegan) (46 kcals, 11.5g)
  • 1 whole egg (or 3 tbsp ground flax seeds mixed in 1 tbsp water for flax egg)
  • ½ cup of regular milk or almond milk (50 kcal, 5g)
  • 1 ripe banana

Instructions:

  1. Add the mashed ripe banana, ground flax egg/whole egg, protein powder, and milk to the bowl and mix all the ingredients to form a smooth batter.
  2. Heat a non-stick pan over medium heat and scoop a portion of the batter onto the pan.
  3. Cook until the edges of the pancake start to dry out, and bubbles appear on the surface.
  4. Flip the pancake and cook until the other side is golden brown.
  5. Repeat with the remaining batter until all pancakes are cooked.
  6. Serve your pancakes with prepared protein syrup. Add other toppings such as fresh fruit, nut butter, or sugar-free syrup.
