Coconut Chocolate Protein Bars

Ingredients:

  • 1-2 soaked dates
  • 3-5 almonds
  • 1 tsp unsweetened cocoa powder (optional)
  • 1 scoop of any flavored protein powder
  • Desiccated coconut (for coating)

Instructions:

  1. Add the almonds to a food processor and process them into coarse flour.
  2. Add the soaked dates and water to the food processor and process until they are well combined with the almond flour.
  3. Add the unsweetened cocoa powder and protein powder to the mixture and pulse until all the ingredients are fully incorporated.
  4. Check the consistency of the mixture and add water, one teaspoon at a time, to make it easier to roll the balls.
  5. Roll the mixture into small, bite-sized balls.
  6. Roll the balls in the desiccated coconut until they are evenly coated.
  7. Place the balls on a plate or tray and refrigerate them for at least 30 minutes before serving.
  8. Store the coconut protein balls in an airtight container in the refrigerator for up to a week.
